Reporting to the Restaurant Manager, the Head Chef is responsible for leading all aspects of kitchen operations, ensuring the consistent production of high-quality food across all menus, and upholding the highest standards of hygiene, safety and efficiency. This role requires strong culinary leadership, financial acumen and a hands-on approach to training and developing the kitchen team, while working closely with the Restaurant Manager. Key responsibilities include ensuring consistent high-quality food production, showcasing creativity in meat and seafood preparation, formulating innovative menus, monitoring food quality and portion control, managing food costs and budgets, ordering product, performing stock takes, and training the kitchen brigade.

Requirements

Minimum of 5 years in a culinary leadership role (Head Chef, Executive Sous Chef or equivalent) within a busy, fine dining environment. Proven ability to lead, train and manage a kitchen brigade, including scheduling and performance management. Strong working knowledge of food costing, menu engineering and inventory/stock control. Thorough understanding of food safety, sanitation and HACCP standards. Recognized culinary qualification or certification (culinary arts diploma, apprenticeship or equivalent) preferred. Flexibility to work evenings, weekends and holidays.
