We are seeking an experienced and qualified Manager who will direct all functions and activities of the Meat Department to achieve sales and profit goals and maintain effective utilization and productivity of all Meat Department employees. This position reports to the Store Manager. Duties and Responsibilities Timely and accurate ordering of products Receive products per policy and check invoices for correct count and cost Control inventory to minimize out of stock and overstocks and to maximize sales Responsible for margin and sales Price marking and restocking cases to ensure quality protection, accuracy and product rotation Perform cutting tests and regular product costings to determine yields and correct retail pricing Take action to control shrinkage and pilferage losses Control department expenses Monitor all meat cases, back-room coolers and refrigeration equipment for correct temperature Ongoing good housekeeping of work, display and storage areas Work alongside various departments, when necessary, kitchen in particular Create and implement Meat Department merchandising program Manage and schedule all Meat Department staff Conduct staff training with special emphasis on cross contamination issues In conjunction with HR, manage recruitment and selection process for the Meat Department, staff performance management and employee development and training Ensure favorable department image with customers through a clean, attractive, friendly and well merchandised Department Ensure special orders are fulfilled accurately Maintain high standards of customer service regarding product handling and use Observe and ensure compliance with all Health & Safety regulations Any other job-related duties as required Skills, Qualifications & Experience Required Ability to perform all the duties listed above in an efficient and satisfactory manner Minimum 5 years' recent experience in management of volume full-service retail meat operations, cutting tests and costing of manufactured products Five years' recent experience in fabricating block ready sub primals Highly effective leader with ambition, drive, determination and sound decision-making skills Extensive experience in the meat trade, particularly fresh meat Proven ability to prepare and display fresh meat effectively Ability to break down a full carcass and use a bandsaw Knowledge of fresh fish and European cheeses Background in prepared and value-added products Ability to work well under pressure and meet deadlines Trained in safe food handling and sanitation standards Strong organizational and time management skills Excellent oral and written communication skills Excellent customer service, interpersonal and communication skills Available to work weekdays, split-shifts, weekends and some public holidays
