The Supermart Ltd. is hiring a We are seeking a fully trained Sous Chef Tournant who will be well versed in the preparation of buffet style, multi-ethnic dishes including sushi and familiar with modern health conscious methods of food preparation, safety and handling. The Sous Chef Tournant should expect to be rotated into different areas of our Food Service Program based on business requirements. This is a hands-on position in a busy seven days a week operation which reports to the Executive Chef. Essential job functions include the following:
Duties and Responsibilities
* Maintain an organized and efficient flow of production, with regards to changes in forecasts and menus
* Mise en Place organize and arrange all components required for menu items
* Follow and enhance our Deli menu to Supermart standards
* Cook all approved menu items for our Food Service Program
* Assist in the preparation of specialty food items
* Prepare salads, sandwiches and other food related orders
* Display hot and cold foods in the Salad Bar and Specialty Case
* Retrieve food items, breakdown and clean food bars at end of service
* Assist with receiving, storage and selection of appealing food items as required
* Train/coach Food Service Program staff as required
* Maintain high levels of sanitation and safety in the kitchen
* Perform miscellaneous job-related duties as assigned
* Available to work split-shifts, weekends and some public holidays
Skills, Qualifications & Experience Required
* A valid certificate from a qualified culinary institution
* Minimum of five years' previous experience in a similar capacity within a large volume production environment
* Knowledge of food cost control
* Well versed in safe, modern and health conscious methods of food preparation
* Trained in safe food handling and sanitation standards
* Skilled at meeting tight deadlines and working well under pressure
* Excellent oral and written communication skillsA valid certificate from a qualified culinary institution
